I really like this simple crock pot dinner. Dump it in, blast it with a bit of slow heat and walk away! What more can a girl ask for on a planned to be hectic day! In the evening rush, we plop some tortillas in the microwave to warm, chop some lettuce and wa-lla... dinner is served. I love, love, LOVE having freezer meals like this in my freezer! Having a large variety of them is even better so my family doesn't get too sick of anything. I learned my lesson when we had something with taco meat every few days. It was life, with a very sick momma, but those days are over. and just in case they come sneaking back, taco meat won't be our staple go to dinner any more. 


This soup came about because my hubby really doesn't like chicken noodle soup. He will eat it if I make it, which I do but he "would just prefer if it had potatoes in it instead of noodles" he said. This soup is super tasty with wild rice, potatoes and other veggies. So very yummy! And the best bonus... it can be made in the crock pot or on the stove top, and you can prep most of it for a freezer meal too.
